Seconded for Dune. I reckon BF could do the definitive audio drama of that first book and do it splendidly.
I'd love to see an adaptation of the Elijah Baley stories from Asimov's Robot series too -- The Caves of Steel, The Naked Sun and The Robots of Dawn. Given how much The Caves of Steel feels like Blade Runner, I reckon Nick Briggs could have a lot of fun with it.

The Scarlett Pimpernel
According to Wikipedia in 2018 the original novel is no longer in copyright.
I would love to hear a lighthearted audio adaptation. I confess I haven’t read Baroness Orczy’s book, but something along the lines of the Richard E. Grant television series would be fun.
Perhaps it could even act as a pilot for a new audio range with plenty of “Hustle” style shenanigans.

Harry Harrison's Stainless Steel Rat series of books would fit quite neatly into Big Finish's wheelhouse.
