What do we want to see in the X-Men cinematic universe?

I have no idea. The end of DOFP suggested that everything from X-Men in 2000 to The Wolverine in 2013 now didn't happen in this timeline so we don't know any of the classic lineup's characters now, bar Logan. We can assume they're something like their early 2000s selves but we don't know what's changed now Logan altered the past. Singer says Apocalypse is the last X-film but I can't see Fox letting that happen. Especially with FF flopping, they need a successful X-Men franchise - with Gambit and Deadpool spinoffs - being successful.
Ideally - we get back to modern day and effectively reboot X-Men (2000). And this time we GIVE CYCLOPS SOMETHING TO DO. There are a whole generation who've never read an X-Men comic who think Cyclops is the boring love rival. We need to show them WHY he's the leader of the pack.
My choice? A trip to the Savage Land. X-Men meets Jurassic World. Failing that - Mr Sinister is long overdue an appearance.

I just want more Patrick Stewart and Ian McKellan. While I did like some of the movies that didn't feature them, they are easily the best thing about the franchise.

A TV series. X-Men works IMO better as a serialised, interlocking, ongoing series of stories.
Also, Captain Britain and MI:13

Well, Deadpool is a runaway success, so you can count on a sequel. Also still in the works besides Apocalypse is Gambit, a third Wolverine, the New Mutants spinoff AND the two tv series Hellfire and Legion. So I think we're covered for the foreseeable future. One thing we will NOT see (Thank God!) is any type of crossover between X-Men and Fantastic Four. Apparently they are not even in the same universe (mutants don't exist in FF), and even though they could do an alt-verse 'through the portal' crossover, Fox has said no.

Actually i've heard that Fox have mysteriously taken Gambit off of their schedule

They did, but that's partially due to the Deadpool success. They've fasttracked Deadpool 2 - and of course Fan4stic 2 has been cancelled - so their slate is very much in flux.
I don't care for Gambit. He was one of the most inexpicably popular characters of the 90s in comics.

I'm glad they've fast tracked Deadpool 2, especially since they already knew what they were doing with the sequel. I'd actually like Gambit to have been introduced in an X-men movie Proper (especially since the recast/retcon)
Oh i'd also actually like to see a take on the Onslaught storyline

Announced earlier: Gambit will indeed start production late this year with Doug Liman directing.
