Collectible as in thing that can be collected, or as in Action Figures/Models/Trading Cards?
The latter, sorry

My personal favorite item is my Fourth Doctor scarf, which is so wonderfully long and colorful that I find myself hoping for a chill in the air so I can have an excuse to wear it.

Don't know if this counts, but I do have a nifty Dalek alarm clock with three murderous catch-phrases.

I don't really collect Doctor Who "things" so would have to say my Big Finish collection!
my star wars 1978 figures, from original run are my most treasured collectables, all unboxed and playworn but very special to me.

Two Telos novellas are the rarest things I have.
The 2/3 complete Virgin New Adventures 1/2 complete Eighth Doctor Adventures is the biggest find I've ever had (given that all but ten of those books was found on a single day last December - there were more EDAs and a ton of PDAs but even at $4 a piece it was just too much).
But ultimately the most sentimental value goes to a twelve-foot hand-knitted Robot-accurate scarf, shipped from Las Vegas as a Christmas present from my girlfriend.

I've got first editions if all the target paperbacks and the original hardback release of The Zarbi. I do love books. My Spearhead from Space was signed by Terrance Dicks when I met him once at an event in Leeds. Lovely bloke.

Tough call.
The collectible that's seen the most use is my doctor Who Trump Card Game.
The collectible I've set in the most prominent position in my home is my Rory action figure (the one with the eyepatch).
The collectible I'm most proud of is the bottle of Tardis bubble bath I won in a costume contest judged by John Pertwee.
The collectibles with the highest resale resale value are the Dalek Target novels autographed by Terry Nation.

original hardback release of The Zarbi. A 1965 Frederick Muller hardback edition of The Zarbi, now that's something! Is it a reprint with an ISBN? Any copies published prior to 1967 would not have an ISBN.

Any copies published prior to 1967 would not have an ISBN. No, it's an original. Not in mint condition but I am proud of it. My book collecting once got so obsessive I had nearly every printing of every book. Bear in mind some books have been reprinted ten times or more and you can see what and obsession it became. It was complicated by the fact that not all reprints were properly documented as such. Some were just old copies with the edges cut off to make them look new, and new covers put on with a new price, which is why some Target books are smaller than others. When a subsequent edition was released, that rejacket was often missed out of the list of reprint (because it wasn't actually a print run). I did massive amounts of research on it over years, then gave most of it away to charity shops when I realised it was becoming unhealthy.

Autographs of all the living Doctors and companions (and quite a few deceased ones now sadly) are up there but for sheer nostaglie...my complete set of VNAs. It WAS Doctor Who to me growing up in the 90s. Full disclosure, some of them aren't my originals as I've upgraded to better condition copies on occasion. I've got full sets of VMAs, PDAs, 8DAS, Targets (originals, not reprints) and Telos Novellas too but I completed those much later.
Last week when Series 9 arrived on bluray I had, again, every episode of the show known to exist on DVD and/or Bluray so that feels good. It's the first time we've been able to say that ever as collectors since there was always classic Who like UWM still to be released alongside Nu-Who so this past week is the first time we can all finish the set to date. A great feeling.
