Yes, that latest interview with Moffat was very good.
I've heard every Who's Round installment thus far.
Toby is perhaps the most ideal person to conduct these sorts of interviews because he has everything going for him... he's friendly, engaging, and he is a peer (acting and stage comedian and writer), a fan/follower of actors, plus he's an enormously well-informed genuine dedicated fan of the entirety the TV show - but he doesn't come off as a foaming-at-mouth kind of fan. Intense life-long fandom like that often doesn't really get an payoff like this. Enthusiasts of a subject study and learn about their topic but other than fulfilling whatever drives that kind of need, it's personal and there may not be much of an outlet for it. But here it's perfect. In my opinion, the best interviewers are ones that know at least a lot of the answers, so they aren't asking inappropriate or stupid/lame questions... combined with an honest and obvious interest in everything the interviewee has to say. Toby has all this. So I'm glad that the BBC gave him work as they did for moderating those DVD extras (I think I've only heard one of them though, since I don't own very many DW DVDs) and I'm glad that Big Finish has let him run with this podcast interview series.
He's taken time off from the podcasts before, and I've been wondering if/when the next one would be, so I'm not surprised that he's doing so. Capping the year with that very excellent chat with Moffat does seem like a good place to step away though. I don't know when he'll come back but I do believe he'll not be able to resist doing more at some point.

Interview with Moffat, eh? I may try to give it a listen. I have to admit that I haven't generally listened to Toby's podcast because I found it too hard to hear with the background noise that some of them have.
