I'm trying to use up leftovers cause I'm moving out of my current place soon.
So...I threw together some canned butter beans and barley, added chopped onion, carrot, celery and parsley, threw in some frozen peas, seasoned with thyme, garlic powder and some white miso and ketchup, added enough water to cook the barley, and threw it in the oven in a covered casserole for an hour an a half.
Wasn't sure what to expect but, surprisingly, it came out delicious!

Busy afternoon. Had a 1-2pm swim, so ate a cold haddock fishcake with cheese sauce filling leftover whilst washing one of the cars when I got back, (as it was covered in salt being parked on the main road), which was an interesting late lunch, but still quite nice... Had roast chicken with miniature potatoes in the skins (and carrots, natch) for tea. Pretty simple but tasty.
A very tender Rump Steak, done rare on the hob, seared hot in beef dripping and with garlic butter poured over. Served with a generous salad and brie and blue stilton on the side, which complemented it well. Nice meal for a Monday teatime.
