So often we talk about classic plays - Jubilee, Spare Parts, Chimes, Red Lady etc., but I figured why not throw up some newer DW plays (within the last 3-4 years) that you feel deserve to be among those ranks? DW plays that made you pause or go 'damn, that was next level'.

That's tough, there have been a lot! Just skimming back through my account to January 2017, the ones I saw that really popped out at me as being ones that made me go "holy crap that was good":
Eighth Doctor - Time War 4 The War Master - Anti-Genesis Short Trips - I Am the Master First Doctor Adventures - The Great White Hurricane
I'm sure I've missed a few, too!

The War Master - Only the Good is going to go down as one of their all-time greatest achievements in my opinion, but The Master of Callous deserves to be considered with the same level of admiration - it's basically a Big Finish Doctor Who horror movie and I love it to bits. Chase the Night from the last Fourth Doctor Adventures box set is one of the best Fourth Doctor stories we've had from Big Finish full stop and that's no small achievement. Daughter of the Gods is just pure 60s perfection and so is The Dalek Occupation of Winter; Warzone/Conversion is a Fifth Doctor classic worthy of being compared to Earthshock; The Middle and Static are the stories that put the Flip and Constance era on par or even ABOVE the Evelyn Smythe era; and The Diary of River Song Series 03 and Series 05 (but Series 03 in particular) are phenomenal.
A little further back than that, I think Aquitaine, The Peterloo Massacre, The Sontarans, The Ravelli Conspiracy, A Full Life, and The New Adventures of Bernice Summerfield Volume 03 are all amongst the greatest stories in Big Finish's very extensive catalogue of fantastic stories.

The Dalek Invasion of Winter and Daughter of the Gods are two that immediately come to mind.

The War Master - Only the Good is top of my list from the last few years, outstanding in every way. (And an impossibly brilliant act for the rest of the range to follow, but I suppose that's a good problem to have!)
As a lifelong Pertwee fan Vol 3 and Vol 5 of The Third Doctor Adventures were priceless journeys back in time.
From the EAs, The Ravelli Conspiracy and The Dalek Invasion of Winter, two stories which couldn't be more different and both superb.
The MR has had many good stories but for me the high point of recent years was the Fifth Doctor's wonderful trilogy which opened 2018: Kingdom of Lies, Ghost Walk and Serpent in the Silver Mask. Classics all of them.
Better Watch Out/Fairytale of Salzburg from the Ravenous series.
And let's not forget (or she'll be very very cross!): Missy Vol 1 - magnificent!
And finally, coming right up to date, I've only just heard it and I haven't even finished the volume yet but I've no doubt about including Palindrome from The Time War Vol 4. That's a modern classic right there.
(I'll stop there, but I could go on... It's been a remarkable few years hasn't it?)

Anti-Genesis and Master of Callous, definitely; Missy 1; Ravenous 2 and Ravenous 4; The Invention of Death (and most 1DAs, really); everything with David Warner. All of the War Doctor. And definitely 8DTW1, for the boot camp story alone. EDIT: in addition to the ones already mentioned, of course. I don't disagree with any of them--especially The Red Lady.

As above, The Red Lady and Absent Friends.
The 3rd Doctor vol.2
Aquitaine & Ghost Walk (the 5th Doctor has had most of the best stories in the last few years).

The Neverwhen was, for me, the definitive War Doctor / Time War adventure and a true classic.

Tartarus really stuck with me when I first heard it, and as I relisten to it as I write this, it is still incredible. Otherwise, some of my personal classics from the last 5 years include.
- Divorced, Beheaded, Regenerated - Dining With Death - Colony of Strangers - Abbey of Heretics - The Conscript - The Enchantress of Numbers - The False Guardian/Time’s Assassin - Rise of the New Humans - The Uncertain Shore - R and J - Master of Callous - Anti-Genesis - Only the Good - Memories of a Tyrant - Primoid - The Scream of Ghosts - The Dread of Night
And many more that I haven’t heard yet!

Agree with most of the examples here - at least the ones I've heard.
I'd like to add Across the Darkened City, from one of the more recent Companion Chronicles sets. That is probably my favorite story from the box set era CCs.

Personally, I adored The Middle and always look forward to a story penned by Chris Chapman.

Tartarus really stuck with me when I first heard it, and as I relisten to it as I write this, it is still incredible. Ahahaha... same. I plan on relistening to Tartarus, too, soon -- I just grabbed the Cicero set on this week's sale, and want to listen to it, first. Really love the character and setting... I hope that if they continue the series proper, they might do a little crossover with the Whoniverse, such as it is, if they can do so without breaking the feel of the range. Like I'd love to see Derek Jacobi show up as an "enemy" character for a story, only for Paul McGann to play a character who arrives at the end to clean up the inevitable mess. Both using era-appropriate pseudonyms, of course.

In terms of Short Trips I’d also recommend I am the Master (written by Geoffrey Beevers no less!) and Deleted Scenes. The latter being a rather poignant and sad piece.

Within the last three years, hmm... Won't go into detail too much ( for here be spoilers ), but I can say that all these stories have one thing in common. They all add a new dimension to their respective Doctors, companions and/or featured elements in a way wholly unique to them. Often by taking an established facet of how audio Who works, one of those preconceptions we as listeners don't tend to notice, and flipping it on its head. It can be something small or something big, but it's always done with a deft edge and an assured nod. I was about to say "The Red Lady" until I noticed it was listed in the OP as a classic play.
