Today I have been to a very highly rated very amazing Italian restaurant (together with my aunt and uncle). OMG, it was awesome. I had the Linguine (pasta) with spinach- lemon sauce with a garnish of roasted crunchy radicchio. One of the best pasta I had eaten in a long while.

Over the weekend I tried to make amaranth risotto, and it was sadly less than successful.
I mean the recipe turned out right, it's just no one really liked it. lol
Maybe amaranth will go over better as a sweet porridge instead?

It might. Amaranth is kind of a tiny grain for risotto, so probably the texture isn't quite right if you are expecting risotto. I've found amaranth works well in recipes that call for bulghar wheat or for small size couscous. Or look for a recipes specifically for amaranth, there are lots on the internet.
