Master/Missy spin off
Cyberman origin details Spare Parts style horrors
Animated Big Finish adaptations
Doctor/Donna adventures (either flashback or with Fourteenth Doctor)
Gallifrey Master destruction explanation.
Rogue Timelord - more adult adventures of a Timelord anti hero, travelling space and time but the adventures are darker, gory and morally grey, with the more troubling aspects of interfering with time explored.
An Eleven and River mini series.
The Trenslelore years

Anthology style animated series bringing in some big name Who writers to bring their most unfeasible live-action ideas. First series, 14 30 minute episodes with 6 incarnations (Bradley, T. Baker, C. 8th Doctor miniseries spin off with Paul McGann but not set in the time war Definitely no Helen or Liv and with a more tv movie accurate costume and longer hair

An 8th Doctor series would be fantastic, but I don't see it ever happening. I don't see the BBC ever wanting two competing Doctors at the same time. But nothing could possibly be any better than that.
Otherwise... I'd be down for some period shows. EG I'd love to see a 1970s (or 1980s) spin-off focusing on UNIT shortly after the 4th Doctor departs. Focusing just as much on social and political issues as the usual alien fare. I don't think it takes much imagination to see the wealth of potential topics afforded by this era, for a show that actually wants to be a proper take on a "mature" Doctor Who show. (By which I emphatically do not mean similar to Torchwood.)
It's the kind of show where it wouldn't be at all out-of-place to have a Doctor guest-star in an episode (well, after the first season or two, at least -- gotta stand on its own first) -- any Doctor. A whole TV series starring Paul McGann? Bit of a long-shot. The 8th Doctor popping up for an episode or two of a spin-off show? Potentially more feasible.
And, speaking of historical eras, here's another idea. Why not take Big Finish' Victorian Torchwood stories and run with 'em? The thing about contemporary earth is that every era in history used to be contemporary. And if aliens are so active here in the 20th and 21st centuries, why not the 19th? Or 9th?
Or -- now bear with me -- the 13th century BCE? Yes, that is correct, I am demanding proposing a Doctor Who spin-off series set immediately before, during and after the ancient apocalypse that was the Bronze Age Collapse. It could feature a Silurian protagonist! With an Ice Warrior sidekick!

Not so much about what I would like... we probably will get something including the companion self-help group if I was to hazard a guess. If they will be connected to Torchwood and / or UNIT, who knows. Maybe we are even getting a dedicated UNIT show.

A UNIT show would be my #1 hope. Kate and Osgood with help from returning companions would be absolutely lovely.
I don't know if other Doctors are on the table or if they wouldn't want to have competing Doctors confusing the general audiences. I don't think it would be an issue, but some might disagree. If we could get other Doctors doing miniseries or an anthology show then I'd like to see Eight, of course, and Bradley's First Doctor along with the Space and Time cast doing new stories for that era, and the Fugitive Doctor is also a natural choice as there's plenty there to flesh out since she's still quite a mystery.
