we know from other stories that people's memories of altered timelines change at different rates, which explains why Henry and George forgot the 60s and their adventures with sixie at different times.
now, what if they've forgotten because they've changed something, something that ripples forwards and affects the sixth Doctor, but as a Time Lord he's somewhat immune to the effects. Something that prevents sixie from travelling with them, therefore undoing their travels. Life changes little for them in the late 19th century, so they don't notice the alterations.
Now, George knows/knew how he died (or was it he knew how Henry died?) he admitted to 60s Ellie he looked it up. Perhaps he did something upon arrival that altered the chain of events leading to his eventual death. Something that effectively results in a younger sixth Doctor dying early, so he wouldn't travel with them therefore they forget everything.
It'd make for a heartrending story for George and the Doctor to be presented with the choice that one of them needs to die in order for the other to live.

The whole memory loss thing felt pointless to me (I'd have preferred to see them have to readjust to Victorian times instead of sweeping a whole series under the rug) so I'd like to see anything that makes proper use of the idea for a story. That sounds like a fantastic plot: you have a great sci-fi concept, a clear conflict, and potentially heartbreaking character drama.
