I can't get them all, so which ones in particular would you recommend?
(I have Series 1-4 and 11, as well as most of the stand-alones/spin-offs.)

I would pick up series 5 since it flows directly out of the two single disc adventures with the 6th Doctor. I’m also a big fan of series 9.

So I'm hearing anything except Series 10. Well... that narrows it down a little Ended up going with 5 and 6. Might as well make my way through chronologically.

Well, I did forget to mention that one, Its actually one of my favourites... And mine, but I feel it is very much a celebration of what has gone before, so may work best after listening to all the other boxsets. I really would start at the beginning and work through them all. Every series is wonderful, it is as simple as that.
