If this ever happened, what audios would you have adapted to the Target range. I’d love for spin-offs to be included, so Peepshow, Master of Callous and Rise of the New Humans would be my top three choices

As full cast or narrations?
If full cast my choice would be "yes". to all..

I think Tartarus would make for a thrilling adventure novel for the Target Range.
I’d also be keen to see them attempt to do something such as The Scorchies.

Something like Legend of the Cybermen feels like an extremely good fit, going from Caroll to Dickens to Verne to Stoker... There's enormous temptation there to do a pastiche of styles like no one's pastiched before. Plus, Peter Ling's novelisation added a few more puzzles and problems for the Doctor and his companions to overcome, Legend could do likewise.
Either that or one of the extremely "vision-heavy" stories like The Emerald Tiger, Cry of the Vultriss or The Apocalypse Element.

Four different stories, four different Doctors, lots of room for backstory and little links between the stories. And all of Evelyn's early stories feel very rich and expandable as well. (And of course there are unofficial novelisations of Sword of Orion and Spare Parts out there by regular Who fan-author R.A. Henderson...)

I’d like to see a few of the Big Finish historical stories such as What Lurks Down Under or The Doctor’s Tale adapted for Target books but written in the style of Donald Cotton Target Books.
For those who are unfamiliar with his Target books, he would generally write them from the perspective of a person of the era that the Doctor and co would visit. The Gunfighters and The Myth Makers are good examples.

From The Genocide Machine up to The Time of the Daleks. You could do a tonne with the imagery and backstory in a lot of those stories. The wetworks of the Kar'charaat ziggurat, the interstellar catapult of Etra Prime, Skaro flooded by the Mutant Phase, the century of mirrors and clocks in Learman's palace. The Genocide Machine would be rather fun. In theory, you could populate the library with texts and references to the other stories in such a way that the reader doesn't realise until after they've read the other books (i.e. Ace finds a manuscript of Shakespearean play... Later, the Doctor asks after it and she doesn't know what he's talking about). My treasure hunting senses are tingling, I've not heard of those novelisations before.

Hello again.
I'd like the 5th Doctor, Peri and Erimem historical stories:
Eye of the Scorpion, The Church and the Crown, The Roof of the World, Council of Nicaea, The Veiled Leopard (could be expanded), The Kingmaker, Son of the Dragon and Bride of Peladon.

Minuet in Hell would be one worth expanding as a Target Novel. Adding in things that were cut while recording and such

Oh for sure It's one of the few stories where you could slip in some material from the original scripts it was adapted from with a little jiggery-pokery (background on the Hellfire Club, for example, stretching back to the 18th century).

Would probably benefit from an epilogue as well. If only to find out what that knock off Buffy the Vampire Slayer got up to next.
