The quote I use most often:
"Remember... three minutes." from Image of the Fendahl, episode 4.
Tom Baker bursts in with this reminder, but holds up four fingers while saying it. Which, on the face of it looks a bit funny, but has a psychological basis underneath, since the difference between verbal and gestural signals generate cognitive dissonance, which becomes more memorable to the listener (in the context of the story) than if the two signals had carried the same message. I like the think that the Doctor did this deliberately and for that reason.

The day after listening to Gobbleknoll Hall, I got Tom Baker's calendar in the mail. In one picture he is sitting in front of his bookcase, he has a set of Pepys' diaries, of course.

I love the bit in the Talons DVD extra when Tom and Philip meet in Tom's grounds and go back to Tom's house to chat. Tom has clearly been directed to meet Philip, say hello, and then let the conversation work its way to Talons. So the first thing Tom says is "HELLO PHILIP. DO YOU REMEMBER THE TALONS OF WENG-CHIANG?"
