I enjoy the Big Finish releases, but the only thing I don't like as much is the behind the scenes disc. I still listen to it but it seems a bit redundant to me on audio. I think Big Finish should make the behind the scenes disc a DVD instead - it would be much more interesting IMO if you could actually see the actors in the recording booths.

They most likely don't have a license to do this. The license is for audio not releasing stuff on DVD. Even with extras it may be tricky.
Also Big Finish has an international customer base. While I can play DVDs from anywhere some of their other customers cannot.

It's probably a lot easier to record the interviews with a microphone, plus a lot less work in post-production. There's also likely less cost involved in mass-producing the finished product. Time is saved by not having to worry about how the actors look either. If you really want to see a video documentary, you should get the Bernice Summerfield Epoch box set. There's a video documentary on that.
If you haven't got it, get the Special Edition of The Visitation, which includes the documentary Dr Forever: The Apocalypse Element which explores Doctor Who on audio. The Dr Forever series of docos explores specific areas of Doctor Who during the wilderness years, including novels (Love and War, on Ark in Space SE), toys (The Celestial Toyroom on The Aztecs SE). There are even docos on the development of the potential anniversary story (Lost in the Dark Dimension on the Inferno SE) and the new series in its early stages (The Unquiet Dead on The Green Death SE). Fun fact, the story you can see being recorded in the Apocalypse Element documentary is The Acheron Pulse, released back in 2012. I think I've even narrowed the specific scene down to the end of Part 1!
It'd be great if we got more pictures of the actual studio from different angles and areas. The cast grouping together by the stairs or in the courtyard is all well and good, but I want to see the actors in the booths, and the director directing. At least show pictures of the famed lunches.

Sounds redundant to me. Watch them say the exact same things you can hear on the CD; the only difference being you can see them in the green room. Undoubtedly it would likely cost a little bit extra for the privilege.
That said, it isn't something that Big Finish have avoided. You can watch the behind the scenes comments made by David Tennant and Catherine Tate on the Tenth Doctor set on YouTube. They're exactly the same as on the CD.

They probably got away with doing it on Epoch with Bernice Summerfield because it was the first big rebrand of the Benny licence (available on download for the first time and there was a big shift in the visuals with the covers being more photo realistic instead of the traditional Adrian Salmon style) and Big Finish pretty much can do what they want with Benny by this point since no one else seems to be interested in her apart from when BBC books republishes New Adventures she features in (Lisa Bowerman doing the reading for Human Nature for example). Clearly sales can't have been as good as Big Finish expected because the next time something from the Benny range included behind the scenes material it was the first New Adventures of Bernice Summefield box set, released after the Benny solo box sets had concluded (at least for the moment).

They are a great continuity-free jumping on point and lead into Epoch.

Sometimes the behind the scenes stuff is interesting. Other times it is forgettable.
Seeing them instead of hearing them? Might be fun on occasion. I don't really need it.

I'd get rid of the behind the scenes stuff & possibly extended the running time of the episodes. I'd be happy with this too, especially with releases like the War Doctor where you get three audio dramas rather than the standard four for box sets.

No dvd's unless BF wants to produce them separately and give them away for free or as downloads or something, but keep them out of my cd's.

I'd get rid of the behind the scenes stuff & possibly extended the running time of the episodes. oh, youre killing me...I love the behind the scenes stuff, sometimes you get some really funny stories, you find out who knew who before they worked for who, who's worked with the other actors and what kind of stuff they have done previously...I love that kind of stuff...It's like coming down from a nice doctor who story without crashing, it's really cool in the box sets, when the war doctor has done kicked ass and I'm all jacked up on mountain dew(literally) and I still have an hour to drive, that extra cd is just right for passing the time and coming down and relaxing...

I doubt the license would prohibit video bts footage. After all we sometimes get snippets via BF produced You Tube videos. And if they were DVDs, having them authored as region free discs isn't a huge deal. I just don't see the need. Most of the bts interviews are pretty repetitive. There are only so many ways we can be told what a great script this is, how wonderful the cast is, what a great family feel BF has and how great Toby's lunches are. Personally I rather see the behind-the-scenes interviews start to focus more on the technical side of the productions.

No, Not really. I buy Big Finish for the Audio and while I enjoy the interviews, I don't always listen to them. So if making them video interviews it could potentially bump the price up and I don't want to spend extra money on something I don't want.

I love the way that some of the actors/actresses don't know that the interviews are at the end of the cd, and they ask about spoilers, sometimes to late to have prevented it, but hey, they cant be expected to actually listen to a BF story or 2 before coming to work, right? NOT!
It's like driving a truck without knowing whether its a 10 speed, a 12 speed or an automatic, I guess you'll figure it out, hopefully.
