I cannot see myself being such a big Doctor Who fan without Big Finish - I could not imagine the last nearly 19 years without them!!

For me it would have to be Nyssa's character, and in that sense the development of most Classic Who companions in a NuWho fashion. In Nyssa's case, we know she now had several solo adventures with the Fifth Doctor which were much darker than any during her time with Adric and Tegan, and rewatching the stories from Season 20 with Nyssa makes me see her in a whole new light because of it. She has effectively grown up with the Doctor since her teens and lived a life of daring and adventure, rather than the timid girl who was only in the TARDIS a little while and left because she got sick. Her returning as an older woman with Tegan and Turlough really fleshed her out and revealed she was a wife and mother, so BF ruined both those things about her life after giving them to her. Other companions too. I could say the same of several others; Steven Taylor, leading a tragic life after he left the Doctor and finding solace in his adventurous granddaughter, his only living relative, Turlough, whose life on Trion before being exiled has been fleshed out in stories like "Kiss of Death" and "Eldrad Must Die!", Mel who has become more than the ditzy health freak who screamed a lot and now feels like a young woman mature beyond her years and a good foil to the darker side of the Seventh Doctor, Leela, who rather than a primitive with a flair for killing is in fact racked with guilt during her travels as shown by the Rocket Men story and "The Evil One," Liz Shaw has a loving mother and a life outside UNIT when she works for them, I could go on. In short, I think BF's greatest service to the Doctor Who mythos is making companions well-rounded characters.

I could list hundreds of things if I allowed myself to do so. Some wonderful things have already been mentioned by others, so I'll limit myself to a few echoes of others and then my own:
* More stories for 1st Doctor companions, including Vicki and Steven (a magical duo), but also Sara Kingdom. * More incarnations of the Master, the Rani, and the Monk. * A Cyberman origin story (Spare Parts) * The Eminence. * The Lost Stories. * Evelyn Smythe. * Stories for Mel, a companion who wasn't given a fair chance in the original series. * The Word Lord. * A proper run for the 8th Doctor and memorable companions for him.
For me (personally), the Ice Warrior stories are a huge win. They never were allowed to reach their full potential in the original series, and only recently returned in the New Series. Part of that is thanks to Mark Gatiss, but the lengthy gap was filled with multiple fine Big Finish scripts with one of my favorite alien races from DW.
But some of the best additions by Big Finish are the stories with the War Doctor and Jago & Litefoot.
