I was wondering if we would ever get stories set in the Russel T Davies era of UNIT with Characters like Colonel Mace, Ross Jenkins or Captain Magambo from episodes The Sontaran Stratagem/The Posion Sky and Planet of The Dead?

Ross would be a difficult one to include, as he dies in his first appearance, meets the Doctor that one time, and BF doesn't cover anything in the new UNIT series pre-Moffat really.
Mace and Magambo I'd be down for, though.

UNIT seemed particularly incompetent during RTDs era so I'm not sure what you could do with them.

Something interesting they could do in that era is Kate's journey to the top of UNIT as head of scientific research. Maybe not the main storyline, but make her a player and a recurring (more and more with each boxset) from the beginning of the range, maybe working with Malcolm in the scientific department, butting heads with her superiors for being too militaristic. Perhaps they could take advantage of UNIT being so incompetent in that era and explain it as the military side not taking into account what scientific research tells them. All culminating in a story arc where she seizes control of the organisation, maybe after her father's funeral and seeing a certain Doctor(s) for the first time. Seeing them there makes her realise what an impact they had on her father's era UNIT and that she can be the change that's needed now.
It could be structured as a four to five boxset limited series, in the style of the anthology releases in the New Series range or even the early Dorian Grays, jumping years, so that some could be standalone and others even connect with certain TV stories. Then end the second to last boxset with her becoming the head of scientific research and attending her father's funeral, thus shifting the focus to her for the last boxset, more in the style of the "storyline" boxset or Children of Earth, some big crisis she steps in to solve, ultimately taking the power within the organisation from the military side.

A UNIT series like the Torchwood monthly range could be pretty interesting - with a focus on a different lead character in each story. That way you can have one with Bambera, one with Emily Chaudry, one with Malcolm Taylor, Benton, Martha, Shindi, Ruth Matheson, whoever!
