Already been done- The Locum Doctors Trilogy.
Although it hasn't been done with the new series Doctors yet. The 10th Doctor and Jamie would be fun.

Ace and 5 would be really interesting to me. Though the thought of Ace and Tegan together is terrifying! True, no Tegan involved. I love the idea of 5 and a older, seasoned Ace. To me no companion has been shaped & molded by their Doctor to the extent Ace has and the idea of her running into the most proper and least devious of Doctors would be a lot of fun.

Ace and War, could lead to a fair bit of tension.
"Professor..." For the first time in all the decades he's known her, she was nervous. The Time Lord robes she wore looked well tailored but, in his opinion both faintly ludicrous and too childish for a member of a society at war, especially one about to go onto the frontline. It was also, not really her. Not Ace, not his Ace. she'd become "theirs" not his. "Ace," he said his voice warming from its previous hectoring tones he'd used to send her predecessor off with. "Are you ... Tactile in this body?" Ace asked, still keeping her distance. She had become a Time Lord, aware of the quirks of regeneration. He'd done this to her, another thing to lay at his door. "I ...." He hesitated, "don't know". Ace ran forwards and embraced the rumple-faced, dark-haired man. He found himself smiling, muscles in his face he'd forgotten how to exactly use twitching into life. "So, the Doctor joins the fight at last" Ace said, still not breaking the hug. The man stiffened noticeably, Ace pulled away, "what? They said you were here to fight". "not that, no. The name." "It doesn't seem right to keep calling you professor.. A pet name in a war field seems childish. and the Daleks hearing that you're coming for them will have some effect, your history and all" "I am not the Doctor, I gave up that name" the man in the Bandolier said, his voice hardening and hating himself for it, Ace didn't deserve his ire. "but your name ... It's important" that was the Time Lord talking, but the look on her face was worse, "it means things, if you have no name it means..." "I have no rules. this is war Ace, rules and moral codes are for peace" the Man in the Bandolier said, a volcanic anger rumbling in his voice, "now, are you ready to fight?" He stalked away. Ace didn't follow him, her blood running cold. She had thought that the Doctor, her Doctor "Time's Champion", the cosmic chess master, the arch manipulator, could be cold, that he was the Doctor at his worst. She'd met some of the others, including her Doctor's successor and this Doctor's predecessor, and she felt she knew the Doctor and felt hers was the best and the worst of him. Now this Doctor, this nameless Time Lord stalking around Station Zerbia in a battered frock coat and heavy bandolier, actually scared her. If her Doctor had a code and still did what he did, what will he do without that code?

The First Doctor and Liz Shaw. I'm fairly certain neither one of them would tolerate the other's guff. In fact, I think the former would take a particular delight in assuaging the latter's disbelief in extraterrestrial life.

The Locum Doctors trilogy and before it The Five Companions adventure have managed to do this, but generally the Doctor doesn't look back and therefore there has to be a good reason for him to go an search for his past companions.
This topic reminded me about a suggestion I had on the old forum. So in the Fan Fiction section I've posted the idea about The Master Key.
